I started cooking that coconut chia pudding during my detox, 14 days cleansing program from the Beauty Chef. And I have to admit that this detox was challenging because you stop sugar (including fruits) and wheat products. I missed my pasta and chocolate! Every morning, I referred to that recipe because that breakfast is delicious. I was looking forward to that only sweet touch I was allowed.
I enjoyed that vegan and healthy breakfast so much that I decided to keep cooking it even after my detox. Another reason is that it is super easy to prepare. It takes less than two minutes in the evening and about five in the morning.
Nutritional Value Of Chia Seed
It is well-known that Chia Seed is superfood but do you know exactly why?
They contain Omega-3
Those seeds are one of the plants that contain the most Omega-3. Omega-3 are essential fatty acids that protect you from heart diseases and inflammation. As a vegan, I do not eat fish so chia seeds are a must. Indeed, they are my main source of Omega-3.
They are a great antioxidant
Surprisingly, they beat many common food sources of antioxidants including blackberries, grapes, pineapple and mango. Thus, they are one of your best allies to fight ageing!
They are rich in mineral
Two tablespoons of chia seeds provide 13% of your daily calcium intake and 18% of magnesium. How efficient for such a small quantity?!!
Here we go, chia seeds are super healthy and easy to incorporate in your breakfast. Now, let’s see how you can make this easy chia pudding!
How to make this vegan chia pudding?
This coconut chia pudding is the easiest breakfast you can think of. You only need 3 basic ingredients and a bit of your favourite fruits. You only need to recall to prepare it overnight because the chia seeds need to soak the milk in.
I prepare that vegan chia pudding with coconut milk because it is my favourite. It gives a sweet taste to the pudding and a fruity touch that makes the difference. However, feel free to use any other vegetal milk. This recipe also works well with soy and oat milks.
I also add agave syrup because I like the preparation to be sweeter. However, you can avoid it or replace it with another natural sugar of your choice. Below is the recipe!
Ingredients:
- 1/4 cup of Chia Seeds
- 1 cup of coconut milk (250ML).
- 1 teaspoon of agave syrup
Recipe Of The Coconut Chia Pudding

1) Mix all the ingredients in a glass mason jar or any other glass recipient you have at home.
2) Place it in the fridge and leave it overnight.
3) In the morning, make sure that the coconut chia pudding is thick enough and that the seeds have gelled. You should be able to put it upside down without anything falling down.
4) Cut some fruits that you place on your pudding and top it up with your favourite nuts.
5) Enjoy!
Note about that coconut chia pudding
You can keep the vegan chia pudding in the refrigerator for 3 days.
I have it for breakfast but is is also an healthy (big) snack if you starve at some point during your day.
I personally love the texture of chia seeds but I can understand that not everyone does. you may blend them with your milk.
